We wonder if that makes sense but soon find out that the “ganth” or bulb variety of this golden-hued spice is richer in curcumin content. At Kashika, these rural nuggets are not only accepted but also respected as clearly generations of home-made masala making has left these women rich in technique and know-how. As the turmeric powder is prepared, it gains and loses color over its many stages but finally assumes a soothing rich chrome yellow. “Ek dum pure hain, dekh lo”, she demands. Who are we to counter that! | “Chakhthe reh jaoge, humari guarantee hai”. These are not tall claims at Kashika, because the women have tried and tested their masala powders among their own families. The confidence comes from reassuring positive feedback from their near and dear ones. “Apno ko hi pasand na aave, toh kaun khave”. Kashika’s Chole Masala is a blend of spicy & tangy flavours, It is a savoury roasted blend of chillies, coriander, cumin, cardamom, cinnamon, peppercorn, cloves, turmeric, and amchur.
